Crock Pot Cuban Mojo Pork Tenderloin

Crock Pot Cuban Mojo Pork Tenderloin recipe is the perfect dinner idea. The pork is loaded with citrus flavor and the best sauce to serve over rice.

Ingredients
- 2 lbs pork tenderloin
- 1 cup orange juice
- 2 limes juiced
- 1 cup cilantro chopped
- 1/3 cup mint chopped
- 1 tbsp minced garlic
- 1 tsp oregano
- 1 tsp salt
- 1 tsp black pepper
- 2 tsp cumin
- 1 tbsp corn starch
- 1/4 cup water
Instructions
- In a small bowl, combine the orange juice, lime juice, minced garlic, oregano, salt, pepper, cumin, corn starch, cilantro, mint and water.
- Add the pork tenderloin to the crock pot.
- Pour the sauce over the top of the crock pot.
- Cover and cook on low for 4-6 hours or on high for 3-4 hours.
- When finished place the pork on a baking sheet lined with foil.
- Spoon the extra sauce on top of the pork tenderloin.
- Broil for 5 minutes on each side or until the pork is browned slightly.
- Let the pork rest for 5 minutes and then it's ready to slice, serve and enjoy!
Notes
- Refrigerate the leftovers in an airtight container for up to 5 days.
- BAKING INSTRUCTIONS:
- Add the pork tenderloin to a baking dish. Pour the sauce over the top of the tenderloin and cover the pan with foil.
- Bake at 400 degrees Fahrenheit for 25-30 minutes until the pork reaches an internal temperature of 145 degrees Fahrenheit.
- Remove the foil. Broil for 3-4 minutes to brown the pork slightly. Let the pork rest for 5-10 minutes and then it's ready to slice, serve and enjoy.
- Pat the pork tenderloins dry with a paper towel.
- In a small bowl whisk together all the ingredients except for the pork tenderloin.
- Preheat the grill over medium high heat (approximately 400 degrees F) and rub the grill grates with oil to keep the pork from sticking to the grates.
- Use tongs to remove the pork from the bag. Shake off the excess marinade. Place on the grill and cook for 15-20 minutes, turning every 3-4 minutes, until the pork reaches an internal temperature of 140 degrees Fahrenheit.
- Remove from the grill. Tent with foil and let sit for 5-10 minutes. The pork should reach an internal temperature of 145 degrees F while the pork is resting.
- Then the pork is ready to slice, serve and enjoy!
