Ingredients
- 3/4 cup orange juice
- 1/4 cup lemon juice
- 1 clove minced garlic
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1/2 teaspoon black pepper
- 3-5 pound boneless pork butt roast
Cabbage Slaw
- 4 cups shredded cabbage
- 1/4 cup apple cider vinegar
- 1 teaspoon granulated sugar
- 1/4 teaspoon salt or to taste
- 1/4 teaspoon black pepper or to taste
For Serving
- 12 (6-inch) corn tortillas
- 1 small sliced red onion
- 1/2 cup chopped fresh cilantro
Instructions
- In a small bowl whisk together 3/4 cup orange juice, 1/4 cup lemon juice, 1 clove minced garlic, 1 teaspoon salt, 1 teaspoon ground cumin and 1/2 teaspoon black pepper.
- Place the 3-5 pound boneless pork butt roast in the bottom of a 5 to 8 quart slow cooker. Pour sauce over pork.
- Cook on low 8 to 10 hours, until pork shreds easily with a fork.
- For the slaw, toss 4 cups shredded cabbage, 1/4 cup apple cider vinegar, 1 teaspoon granulated sugar, 1/4 teaspoon salt, and 1/4 teaspoon black pepper together in a mixing bowl.
- Shred pork and serve on corn tortillas with cabbage slaw, sliced red onions, and freshly chopped cilantro.
