  • 2 chicken breast boneless skinless
  • 1/2 onion (chopped)
  • 3 potato peeled and dice
  • 16 oz mixed vegetables frozen
  • 28 oz crushed tomatoes (can)
  • 14.5 oz tomato sauce (can)
  • 4 cups chicken broth
  • 1 Tbsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Place all of the ingredients in a 6 quart crock pot.
  2. Stir to combine the ingredients in the crock pot.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. Remove chicken, shred and mix it back into the crock pot.
  5. Serve warm and enjoy!

Notes

  • If using frozen chicken breasts, add 1 extra hour to low cook time or 30 minutes to high cook time for proper doneness.
