Description
This soup features boneless, skinless chicken breasts cooked with diced potatoes, chopped onion, frozen mixed vegetables, crushed tomatoes, tomato sauce, chicken broth, Italian seasoning, salt, and black pepper. Ingredients
- 2 chicken breast boneless skinless
- 1/2 onion (chopped)
- 3 potato peeled and dice
- 16 oz mixed vegetables frozen
- 28 oz crushed tomatoes (can)
- 14.5 oz tomato sauce (can)
- 4 cups chicken broth
- 1 Tbsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Place all of the ingredients in a 6 quart crock pot.
- Stir to combine the ingredients in the crock pot.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken, shred and mix it back into the crock pot.
- Serve warm and enjoy!
Notes
- If using frozen chicken breasts, add 1 extra hour to low cook time or 30 minutes to high cook time for proper doneness.
