Crockpot Cuban Pork Chops

Crockpot Cuban Pork Chops are slow-cooked with a blend of spices including cumin, garlic, and oregano, along with a tangy mixture of lime juice and cider vinegar that tenderizes the meat. The pork chops develop a rich aroma and juicy texture from being seared before slow cooking with onions, garlic, and a flavorful broth. The result is tender chops infused with savory and slightly acidic notes, enhanced by caramelized onions served on top. This low and slow method ensures the pork remains moist and flavorful, suitable for a comforting dinner.

Description

Crockpot Cuban Pork Chops showcases the use of dried spices—cumin, garlic powder, onion powder, and oregano—to season thick-cut pork chops that are first seared to create a brown crust. The pork is then slow-cooked with sliced onions, chopped garlic, chicken broth, fresh lime juice, and cider vinegar, allowing the meat to soak in bright, tangy, and savory flavors. The slow cooker helps break down the pork to tender, juicy consistency while the combined liquids and aromatic ingredients form a flavorful cooking broth.

Cooking in the crockpot for several hours softens the meat and makes the onions and garlic melt into the broth, which can be poured over the chops when served. Optional garnishes like avocado and Roma tomato add freshness to the dish.

Adding a can of cream of chicken soup can enrich the sauce further for creamy pork chops. Marinating the pork beforehand in orange juice and zest can introduce a sweeter Cuban flair to the meat without overwhelming the original spice rub.

Ingredients

Servings
  • 4 pork chops 1 inch thick
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 1/2 teaspoons cumin ground
  • 1 teaspoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon oregano dried
  • 3 tablespoon canola oil
  • 1 onion sliced
  • 2 cloves garlic chopped
  • 2 cups chicken broth
  • 2 tablespoons lime juice fresh
  • 1/4 cup cider vinegar
  • avocado (optional, for garnish)
  • Roma tomato optional, for garnish

Instructions

  1. In a small mixing bowl, combine all dried spices. Pat the pork chops dry with a paper towel and rub with the dry spice mixture.
  2. Heat oil in a large saute pan over high heat.
  3. Place the pork chops in the pan and sear on 1 side until brown. Flip over sear until brown.
  4. Remove chops and place in crockpot (slow cooker).
  5. Add onion and garlic to pan and saute for 1-2 minutes, add onion/garlic to crock pot with the pork. Combine chicken broth, lime juice, vinegar, and pour over the pork in the crock pot.
  6. Cover and cook for 2-3 hours on high heat or 5-7 hours on low heat. Check for doneness depending on the size of the chops.  They may need more time in the crock pot if they are bigger pork chops.
  7. Pour remaining liquid over the chops when ready to eat. Garnish with the slow-cooked onions. Enjoy!

Notes

  • Adding cream of chicken soup to the crockpot creates a creamy gravy that thickens the sauce and adds depth of flavor.
  • Marinate pork chops in fresh orange juice and zest for 2-3 hours to introduce a sweeter, citrus flavor before cooking; discard marinade and pat dry before seasoning.
