Crunchy Candied Pecans

Ingredients

  • 1 lb pecan halves
  • 1/4 cup salted butter
  • 2 egg whites
  • 1/8 cup white sugar 27 g
  • 1/8 cup brown sugar 28 g
  • 1 teaspoon cinnamon 2 g
  • 1/4 teaspoon ground ginger 1 g
  • 1/8 teaspoon nutmeg
  • 1 teaspoon vanilla

Instructions

  1. Preheat Oven: Line a baking pan with parchment paper and add butter to the center. Preheat oven to 325 ℉ and add the pan to the middle rack of the oven to let the butter melt. Remove from the oven once the butter is fully melted.
  2. Whip Eggs and Prep Sugars: Add sugars, cinnamon, ginger, and nutmeg to a small bowl, mix, and set aside. Add egg whites to a large bowl and with a hand mixer beat on medium until soft peaks form, about 3 minutes. Add the vanilla extract and the sugar mixture and beat for another minute.
  3. Coat Pecans: Add pecans to the large bowl and coat the pecans with the whipped egg and sugar mixture.
  4. Bake: Once all of the pecans are coated, add them to the baking tray. Turn the pecans in the pan to coat with butter and then spread them to an even layer. Place in the oven on the middle rack and bake for 30 minutes, turning the pecans in the pan every 10 minutes.
  5. Serve and Enjoy!
