Crunchy Thai Chicken Chop Salad

This crunchy Thai Chicken Salad is full of delicious veggies and chicken, dressed with a flavorful lime cilantro dressing.

Ingredients

Servings
  • 1 package coleslaw mix cabbage, carrots, red cabbage, shredded
  • 3 cups red cabbage chopped
  • 3 heaping cups baby spinach chopped
  • 3 scallions chopped
  • 1 avocado cubed, ripe haas variety
  • 1 cup sugar snap peas sliced
  • 2 cups chicken shredded rotisserie
  • peanut for garnish, chopped peanuts
  • cilantro for garnish, chopped peanuts

for the dressing-

  • 2/3 cup olive oil light
  • lime juice or 4 if they're not particularly juicy, juice of 3 limes
  • 1/2 cup cilantro about 1/2 a bunch
  • 2 tablespoons Truvia
  • salt to taste
  • black pepper to taste
  • 2 cloves garlic minced

Instructions

  1. Place all salad ingredients into large bowl.
  2. Blend all dressing ingredients together in blender.
  3. Toss dressing with salad and top with peanuts and cilantro. Serve immediately.

Notes

  • *feel free to substitute 3 tablespoons granulated sugar for 2 tablespoons truvia sweetener
