Dal Mash
Description
Dal Mash utilizes soaked black gram lentils cooked along with lightly browned onions, garlic paste, and chopped tomatoes. The mix of chili powder, turmeric, salt, and cumin powder adds warm, earthy flavors and some heat. The cooking water ensures the lentils soften and the spices release their color and aroma.
The lentils yield a soft, thick consistency with a balanced blend of spices. The method includes simmering the lentils covered to tenderize evenly. Fresh chopped coriander at the end adds a herbal note.
This dal pairs well with homemade chapatis or other Indian breads, making a filling vegetarian meal with comforting textures and spiced depth. It can be served immediately while warm.
Ingredients
- 50 ml olive oil
- 300 g lentils Split Black Gram (Urad Dal)
- 2 onion
- 1 tsp garlic paste
- 1- inch ginger
- 2 tomato
- 1 tsp chilli powder
- 1 tsp turmeric powder Haldi
- 1 tsp salt
- 1 tsp cumin powder
- 300 ml water
- 2 green chili
- Coriander Dhaniya
Instructions
- Wash and soak the black gram lentils for 30 minutes
- As the lentils are soaking add the olive oil in the pan and heat on medium heat until hot
- Add the finely diced onions and cook for 4-5 minutes until lightly browned
- Add the garlic paste and sauté for 1-2 minutes
- Add the chopped tomatoes and cook for 4-5 minutes
- Add the chili powder, turmeric powder, and salt then cook the spices for 3-4 minutes – add a few tablespoons of water to ensure that the spices do not burn and to allow the spices to release their colour
- Add the washed black gram lentils then cook for 4-5 minutes
- Add the water and cover with a lid then allow to cook for 10-15 minutes – you may need to add more water if required
- Add the cumin powder and chopped coriander
- Serve immediately with homemade chapatis and enjoy!

- Use freshly chopped coriander for garnish to enhance freshness.
- Ensure lentils are soaked for 30 minutes before cooking to reduce cooking time.
