Date Snickers

Looking for a healthy alternative to satisfy your sweet tooth? These Date Snickers have all the flavors of your favorite candy bar but are made with natural sugars, healthy fats and packed with gut-friendly fiber. These chocolate covered peanut butter stuffed dates are made with only 5 simple ingredients and make the perfect pre-workout snack or after-lunch dessert.

Ingredients

  • 10 Medjool dates
  • 2 Tbsp peanut butter (30g) I used Jif
  • 1/4 cup salted peanuts (28g) chopped - plus more for sprinkling overtop
  • 1/2 cup dark chocolate chips
  • Flake salt if desired to sprinkle on top

Instructions

  1. Line a small baking sheet (big enough to fit in your fridge) or plate with parchment paper.
  2. Use a sharp knife to cut a slit into each date along the long side, leaving one side attached. Remove the pit and set the open dates on the baking sheet.
  3. Add 1/2 teaspoon peanut butter to each date. Smear on both sides of the inside of the date.
  4. Then add about 1 teaspoon chopped peanuts to each date.
  5. Close the date and stick a toothpick through the middle so it stays together. Leave enough room so you can hold the toothpick to dip. I love long toothpicks for this!
  6. Add chocolate to a microwave-safe bowl. Microwave at 70% power, in 30 second increments, stirring in between, until melted.
  7. Dip each date into the melted chocolate. Use a spoon to help coat the date and allow any extra chocolate to drip off. Set the dates back on the baking sheet. Sprinkle remaining or extra chopped peanuts on top and flake sea salt if desired.
  8. Place dates in the fridge until the chocolate has set, about 10-15 minutes. Then enjoy!

Notes

  • Helpful tip: use a piping bag or a zip-lock bag and cut a corner to easily fill dates with peanut butter!
  • Store in an airtight container in the fridge for up to a week.
  • You can also store these treats in the freezer for 1-2 months.
