Double Chocolate Brownie Cookies

These easy to make chocolate cookies have the pudginess of a brownie with the taste of a cookie. Perfect for dessert.

Ingredients
- 4 oz semi-sweet chocolate chopped
- 3 Tablespoons butter
- 1/2 Cup sugar
- 2 eggs
- 1/2 Teaspoon pure vanilla extract
- 1/2 Cup all purpose flour
- 1/2 Teaspoon baking powder
- 1 Teaspoon cornstarch
- 1/4 teaspoon salt
- 1/4 Cup walnuts chopped - optional
- 1/2 Cup semi-sweet chocolate chips
Instructions
- Preheat oven to 375 Degrees Fahrenheit
- Line 2 baking sheets with parchment paper
- In a pot over medium low heat, melt the butter and chocolate together. Stir frequently to avoid the chocolate from burning
- Remove the chocolate from heat and place the mixture on a mixer.
- Add the sugar and mix for 2-3 minutes on medium low heat
- Add the eggs one at a time and mix
- Add the vanilla, mix
- Add the flour, baking powder and salt and mix
- With a spatula, fold in the walnuts and chocolate chips
- Using an ice cream scoop, place mounds of cookie dough on the cookie sheet. Leave a space in between because they spread
- Bake for 9-10 minutes
- Remove from oven and let the cool on a cooling rack
- Enjoy!
Notes
- The cookie dough is runnier than usual (like brownie batter), but it's ok. They set up when they bake
- If you want to make taller cookies, refrigerate the batter for 1 hour before baking.
