Ingredients
Salad:
- 1 cup diced cooked potatoes
- 1 cup diced cooked beets
- ¼ cup thinly sliced onion
- 1 Small apple diced
- 1 hard-cooked eggs diced
- ½ cup firm cheese cubes e.g. Gouda, Cheddar, Edam
- ¼ cup diced pickle
Dressing:
- 2 Tablespoons cider vinegar
- 2 Tablespoons extra virgin olive oil
- salt pepper to taste
For serving:
- ¼ cup or more good mayonnaise
Instructions
- Combine salad ingredients and toss until well mixed.
- Whisk together dressing ingredients then toss with salad.
- Serve salad with a generous dollop of mayonnaise.
