Easiest White Chocolate Raspberry Blondies

White chocolate raspberry blondies are irresistibly indulgent dessert bars that combine the creamy sweetness of white chocolate with the tangy burst of raspberries. They boast a soft and chewy texture, complemented by the contrasting flavors of the rich white chocolate and the bright, fruity notes of raspberries.

Ingredients

Servings
  • ½ teaspoon baking powder
  • Pinch of salt
  • 1 cup all purpose flour
  • ½ cup butter melted
  • 1 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • cup white chocolate chips
  • ½ cup raspberries

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium mixing bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate large mixing bowl, whisk together the melted butter and brown sugar until well combined.
  4. Add the egg and vanilla extract to the butter and sugar mixture, and whisk until smooth.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.
  6. Gently fold in the white chocolate chips and the fresh raspberries.
  7. Pour the blondie batter into the prepared baking pan, spreading it out evenly.
  8. Bake for approximately 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with a few moist crumbs.
  9. Allow the blondies to cool completely in the pan on a wire rack before cutting into squares.
  10. Once cooled, carefully remove the blondies from the pan using the parchment paper overhang. Cut into desired serving sizes and enjoy!
