Ingredients

  • 3 large bananas mashed
  • ½ c. white sugar
  • 1 egg beaten
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 ½ c. all-purpose flour
  • c. butter melted
  • ½ c. chocolate chips

Instructions

  1. Preheat oven to 425 degrees.
  2. Line muffin pan with baking cups or spray them lightly with cooking spray. Set aside.
  3. In a large mixing bowl combine bananas, sugar and egg. Add melted butter and stir until combined.
  4. In a separate bowl combine dry muffin ingredients. Add to wet ingredients and stir until just combined. Lastly, add chocolate chips and stir until just combined.
  5. Using a 1/4 cup measuring cup divide up batter into prepared muffin pan.
  6. Bake at 425 degrees F for 5 minutes then reduce oven temperature to 350 degrees and bake 15-19 minutes or until toothpick inserted comes out clean.

Notes

  • Store any leftover muffins in an airtight container after they have cooled completely.
  • Thaw frozen muffins in refrigerator or on the countertop. You can also place them in the microwave for a few seconds.
