  • 2 tablespoons vegetable oil
  • 2 onion chopped
  • 4 potato peeled and cubed
  • salt to taste
  • black pepper to taste
  • 1 tablespoon cider vinegar

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Sauté onions and potatoes until slightly browned, then stir in corned beef.
  3. Season salt, pepper, and add vinegar. Cook for 3-5 minutes in between each addition.
  4. Partially cover the skillet. Reduce the heat to medium-low, stirring occasionally for about 20 minutes or until the potatoes are tender.
