Easy Cheesy Enchiladas

Easy Cheesy Enchiladas feature softened corn tortillas filled with a mix of scallions, cilantro, and Monterey Jack cheese, rolled and baked in enchilada sauce topped with melted cheese. The tortillas are briefly fried for pliability before assembly. The baked dish offers melted cheese and aromatic herbs with a saucy finish, ideal for a comforting main course.

Description

This recipe softens corn tortillas in oil until flexible to prevent cracking when rolled. A filling made of chopped scallions, cilantro, and shredded Monterey Jack cheese is spooned into each tortilla, which is then rolled and arranged in a baking dish. Enchilada sauce is ladled over the rolled tortillas, and the dish is topped with more cheese.

Baking at 375ºF melts the cheese and warms the sauce, yielding a dish with gooey, melted cheese, tender tortillas, and fresh herb flavor. The enchilada sauce offers subtle spiciness and moisture, complementing the cheesy filling.

These enchiladas can be served with traditional sides such as Mexican rice, refried beans, or guacamole. Additional seasonings like chili powder or cumin can be added to the filling for extra spice, or protein such as shredded chicken or ground beef can be included.
