Easy Chicken Fajitas

Easy Chicken Fajitas use strips of seasoned boneless chicken breast cooked with sliced onions and bell peppers. The fajita seasoning imparts a balanced spice profile, while cooking peppers to a slight crunch maintains texture. Served with warm tortillas and optional salsa and sour cream, the dish offers approachable Tex-Mex flavors for a casual meal.

Description

Chicken breast is sliced into strips and coated with fajita seasoning partway through cooking to build flavor during sautéing until fully cooked with a slight char. Vegetables like onions and red and green bell peppers are sliced similarly and cooked until just tender but still retaining a bit of crunch, adding freshness and contrast. An optional jalapeño can be included for heat. Cooking involves sautéing ingredients separately to achieve proper textures, then combining before serving.

The dish assembles on tortillas with optional salsa and sour cream, allowing customization of flavor and creaminess. The fajita seasoning mix provides traditional Tex-Mex flavors with spices that complement the chicken and peppers without overpowering.

This meal is suitable for quick dinners and casual entertaining, offering hands-on assembly that can accommodate various toppings and accompaniments.

For those without access to pre-made fajita seasoning, a homemade seasoning mix or pre-made fajita sauce can be used as substitutes. The recipe originates from February 2012, reflecting a straightforward technique and flavor profile.

Ingredients

Servings
  • 1 pound chicken breast boneless and skinless
  • 1 large onion (or 2 smaller ones)
  • 1 medium red bell pepper
  • 1 medium green bell pepper
  • 1 tablespoon olive oil
  • tablespoon fajita seasoning
  • 1 jalapeño optional

For serving

  • 8 medium tortillas
  • salsa optional
  • sour cream optional

Instructions

  1. Cut the chicken breasts into long strips; set aside. Slice the onion into long strips. Slice the peppers into long ¼ inch strips.
  2. Heat the olive in a large skillet. Add the chicken to the skillet then sprinkle about half of the fajita seasoning over the chicken and toss. Cook the chicken for 5 to 10 minutes until it's fully cooked and no longer pink, and it's slightly charred, but not burned. Transfer the chicken to a plate and set aside.
  3. Add another tbsp of olive oil to the skillet, if needed. I used a non stick skillet, so it wasn't necessary to add anymore oil. Add the onion and cook for a couple minutes until it's slightly translucent. Add the peppers and the remaining fajita seasoning and toss. Cook for another 3 to 5 more minutes so the peppers cook slightly, you don't want them over cooked, they should be a bit crunchy. Add the chicken back to the skillet and toss with the peppers.
  4. Serve over tortillas and top with salsa, sour cream and any of your favorite toppings.

Notes

  • If fajita seasoning is unavailable, use a homemade seasoning blend or a pre-made fajita sauce as alternatives.
  • Recipe dates back to February 2012, demonstrating a reliable and simple approach to chicken fajitas.
