Easy Crockpot Chicken Gyros
Description
This recipe combines butter and onions first in a crockpot to coat the onions, then adds chicken pieces seasoned with lemon zest, lemon juice, oregano, salt, and pepper. Chicken broth helps keep the meat moist as it cooks on low or high heat until tender over a few hours.
The slow cooking allows the chicken to absorb the bright lemon flavor and the classic herb oregano, creating a mildly zesty and aromatic protein for the gyros. The chicken pieces remain juicy, balancing the fresh toppings of sliced tomatoes and cool tzatziki sauce.
To serve, the chicken mixture is spooned onto flatbread (such as pita or other flatbreads), topped with tomato and tzatziki. Ingredients
- 2 tablespoons butter
- 1 onion diced
- 1 1/2 pounds chicken cut into 1" pieces
- lemon from 1 small to medium-sized lemon, zest
- lemon juice from 1 small to medium-sized lemon
- 1/2 cup chicken broth
- 2 teaspoon oregano
- salt to taste
- black pepper to taste
- 6 lices flatbread
- 2 tomato sliced or diced
- 1 cup tzatziki sauce
Instructions
- Add butter and onions to crockpot. When butter is melted, stir onions around to coat in butter.
- Add chicken to the bottom of the crockpot, placing the pieces evenly over the onions.
- Add lemon zest, lemon juice, chicken broth, oregano, and salt and pepper.
- Cover and cook on high for approximately 2 hours or on low for 3-4 hours.
- Serve by placing a little chicken mixture on each flatbread and topping with Tzatziki sauce and sliced or diced tomatoes. Optional toppings are sliced red onions and cucumbers.
Notes
- Use the provided Tzatziki Sauce recipe for authentic flavor.
- Leftover chicken works well in bowls, pizzas, or salads.
- If you don't have a crockpot, grilling or baking the chicken is a good alternative cooking method.
