Easy Filipino Chicken Adobo

Easy Filipino Chicken Adobo is a classic braised chicken dish marinated in soy sauce, vinegar, garlic, and spices then simmered until tender. The interplay of salty, tangy, and slightly sweet flavors produces a rich glaze that coats the browned chicken. Whole peppercorns and bay leaves contribute depth to the sauce, which thickens during the final simmer for a concentrated taste.

Description

Filipino Chicken Adobo starts with marinating bone-in chicken pieces in a mixture of soy sauce, vinegar, garlic, sugar, and whole black peppercorns, along with bay leaves for herbal aroma. After marinating, the chicken is browned in oil to form a golden crust. The reserved marinade and water are added and simmered until the chicken is tender and the sauce thickens into a glossy glaze.

The resulting dish balances salty and sour notes from the soy sauce and vinegar, rounded with a hint of sweetness and garlic flavor. It provides tender meat with a flavorful coating and a sticky sauce that is ideal over steamed rice or alongside simple vegetables.

The recipe allows marinating from 20 minutes up to overnight, which deepens the taste. Cooking the chicken uncovered during the final simmer lets the sauce reduce and intensify. Garnishing with green onion adds freshness if desired.

Ingredients

Servings
  • 2 lb (900 g) chicken or chicken thighs and drumsticks, bone-in pieces
  • 1/2 cup (120 ml) soy sauce
  • 1/4 cup (60 ml) white vinegar or apple cider vinegar
  • 1 tbsp sugar or brown sugar
  • 1 tbsp garlic minced
  • 1 tsp black peppercorn whole
  • 5 bay leaf
  • 2 tbsp neutral cooking oil generic cooking oil
  • 1/2 cup (120 ml) water
  • 1 green onion chopped, optional garnish

Instructions

  1. In a large zip bag, combine soy sauce, vinegar, sugar, garlic, peppercorns, and mix well. Add chicken pieces and bay leaves, then toss to ensure they are coated with the marinade. Let the chicken marinate for at least 20 minutes or up to overnight.
  2. Heat oil over medium-high heat in a large skillet or pot. Remove the chicken from the marinade, allowing most of the marinade to drip back into the bag (reserve the marinade). Place the chicken in the hot pan and cook undisturbed for 2 minutes, until it becomes slightly brown and golden. Flip the chicken and cook for an additional 2 minutes.
  3. Add the reserved marinade, including the bay leaves, to the skillet. Pour water over the chicken, and bring it to a boil. Then, reduce the heat to medium and let it simmer for 10-15 minutes uncovered until the sauce reduces down to a thick glaze. Flip the chicken to the other side while simmering.
  4. If the sauce isn't thick enough, remove the chicken onto a plate and let the sauce simmer on its own—it will thicken more quickly. Then, return the chicken to the skillet and coat it with the glaze.
  5. Serve the adobo chicken over fluffy white rice, and garnish with chopped green onions.
