Easy Halloween Sandwich Recipe: Spooky RIP Tombstones

Ingredients
- 4-6 lices of Pumpernickel bread
- 1/3 cup cream cheese softened
- 2 cucumbers
- 1 clove garlic minced
- 2 cups kale microgreens
Instructions
- Place cream cheese in a small bowl. Add garlic.
- Add kale microgreens.
- Mix well.
- On a cutting board, cut one bread slice into 2 slices lengthwise. Spread cream cheese mixture on one half.
- Cut cucumbers into round slices. Lay out a few cucumber slices onto the cream cheese mixture and cover with the second slice of bread.
- Fill in a piping bag with cream cheese. Use the smallest tip to draw a border and make a RIP inscription on the top of the sandwich.
- Arrange the tombstone sandwiches on a kale microgreen carpet.
Notes
- No piping bag? Use a toothpick instead. Works just as fine! Another option is to use a white edible marker pen for a more precise decoration.
