Easy Homemade Balsamic Dressing
Description
The balsamic dressing is made by blending high-quality extra virgin olive oil or avocado oil with balsamic vinegar, additional red wine vinegar, Dijon mustard, honey or a sweetener, minced garlic, salt, and black pepper until smooth. This blending creates an emulsified dressing that coats salad greens evenly. The honey balances vinegar's acidity while the garlic adds savory depth. Dijon mustard helps maintain emulsification and adds mild sharpness. The recipe encourages tasting and adjusting vinegar and honey levels to achieve preferred tartness or sweetness. The dressing thickens when chilled but can be thinned by bringing to room temperature or adding a little more oil or vinegar. The combination makes a versatile vinaigrette for a variety of salads or vegetables.
Produced yield is about one cup and the recipe is easily scaled up or down. The dressing can be kept refrigerated and shaken before use.
Ingredients
- ½ cup extra virgin olive oil or avocado oil, quality
- ¼ cup balsamic vinegar plus extra to taste
- 1-2 TBSP red wine vinegar
- 2 TBSP Dijon mustard
- 2-3 tsp honey (or sweetener or choice if vegan)
- 2 cloves garlic (peeled, smashed, and minced)
- 1 tsp salt
- ½ tsp black pepper
Instructions
- For an emulsified dressing. Add ingredients to a small food processor or blender and blend until smooth.
- Taste and feel free to adjust levels of balsamic and honey/sweetner to taste. I like mine with a kick of tartness from the vinegar (to make my salad pop!) but if you'd like it to taste a bit more like restaurant dressing, you can add a little extra oil and adjust the honey/sweetener to reach your sweet spot. The above measurements are my dream combo!
- Transfer to a lidded mason jar and pour over all your tasty salad creations!
Notes
- This recipe yields about 1 cup; scale as needed.
- Chilled dressing thickens; warm to room temp and shake before serving to thin.
- Adjust vinegar and sweetener to suit your taste.
