Description
The dressing is made by whisking together olive oil, vinegar, Italian seasoning blend, garlic powder, salt, and freshly ground black pepper. Allowing it to sit infuses the oil and vinegar with herbs and softens the dried seasoning, deepening the flavor. Optional ingredients like fresh minced garlic, fresh parsley, crushed red pepper flakes, or grated Parmesan can be added for variety.
This vinaigrette keeps well in the refrigerator for about a week, making it convenient for preparing salads over several days. The proportions favor a typical oil-to-vinegar ratio near 3:1, but can be adjusted to personal taste for acidity or richness.
Adding Parmesan or a splash of Dijon vinegar offers subtle twists without changing the core simplicity. This versatile dressing pairs well with a wide range of greens and raw vegetables.
Ingredients
- ¼ cup extra virgin olive oil
- 3-4 TBSP white wine vinegar or champagne vinegar
- 1/2-1 TBSP Italian seasoning blend (I love using Mrs. Dash's salt-free blend)
- ½ TBSP garlic powder
- ¼ tsp salt
- black pepper to taste, freshly ground
OPTIONAL EXTRAS
- 1-2 tsp parsley fresh
- 1 clove garlic (smashed + minced)
- ⅛ tsp red pepper flakes crushed
Instructions
- Whisk all ingredients together and allow to sit. Giving the dressing some time to mingle will not only infuse flavor into the oil/vinegar but also soften the dry herbs and seasoning.
