Ingredients
- 1 1/2 cups flour
- 1 cup sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- Grated rind of 1 lemon
- 2 eggs lightly beaten
- 1/4 cup butter melted
- 1/4 cup milk
- 2 tablespoons fresh lemon juice
- 1/3 cup frozen lemonade concentrate thawed

Instructions
- Preheat oven to 350 degrees F and grease a 9x5-inch loaf pan.
- In a large bowl combine flour, sugar, baking powder, and salt.
- In a separate bowl combine lemon rind, eggs, melted butter, milk, lemon juice, and lemon concentrate mixing well.
- Add wet ingredients to dry ingredients and mix only until flour is moistened. Do not over-mix.
- Pour batter into a greased 9x5 loaf pan and bake at 350 degrees F. for 50 - 60 minutes or until the cake tester comes out clean.
- Let cool in pan for 5 minutes, then turn onto the rack to cool completely.
