Ingredients
- Monkey Bread Dough
- 500 grams all purpose flour
- 20 grams fresh yeast
- 100 grams water
- 150 grams eggs
- 10 grams salt
- 75 grams sugar
- 75 grams butter
- Coating
- 150 grams brown sugar
- 92 grams granulated sugar
- 8 grams cinnamon
- 200 grams butter for coating the dough pieces
Instructions
- Add all the monkey bread dough ingredients into a stand mixer with the hook attachment and mix 8 minutes on slow speed and 5 minutes of high speed.
- Tranfer dough onto a flour working surface and divide into small pieces, about 20 grams each.
- Prepare the coating, add the both sugar and cinnamon into a bowl and mix together.
- Melt the butter, then coat each dough. Toss the pieces into the cinnamon mixture and coat.
- Place into greased bundt or tube cake pan.
- Cover and allow to proof for about 2 hours or until it doubles in size.
- Preheat the oven to 180C.
- Bake for about 20-25 minutes or until dark golden brown.
- Remove the monkey bread from the oven and turn over onto a wire rack to release it.
- Allow to cool for 30-45 minutes.
- Enjoy!
