Easy Peanut Noodles - This quick weeknight dinner is easy to make and delicious. Features rice noodles tossed with a soy peanut sauce. It's vegetarian & GF.

Ingredients
- 16 oz Rice Ramen Noodles
- 1 tablespoon peanut butter
- 2 tablespoon soy sauce
- 2 tablespoon sesame oil or olive oil
- 1 tablespoon honey
- 1 teaspoon rice vinegar
- 1 clove garlic minced
- 1 teaspoon fresh ginger grated
- scallions sliced
- 2 tbsp peanuts crushed
- 1 tbsp sesame seeds
- scallions sliced
Instructions
- Cook the noodles according to package directions
- In a bowl, whisk the peanut butter, soy sauce, oil, honey, rice vinegar, ginger, garlic and scallions
- Pour over the cooked and hot noodles
- Toss gently to coat all the noodles, sprinkle with the peanuts and serve!
