Description
The recipe begins by gently cooking chopped white onion and minced garlic in extra-virgin olive oil to develop a mild aromatic base. Canned whole tomatoes in puree, roughly chopped to retain some texture, are added along with their juices to the pan. Fresh minced basil, sugar, kosher salt, and freshly ground black pepper contribute herbaceous notes and seasoning adjustments as the sauce simmers.
Simmering the sauce for about ten minutes allows flavors to meld while keeping the tomato pieces slightly chunky rather than fully pureed, resulting in a rustic texture. Tossing the sauce with your preferred pasta cooked to al dente ensures the noodles hold up well to the sauce's thickness and acidity. Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons white onion , chopped
- 2 cloves garlic , minced or pressed
- 1 (28-ounce) whole tomatoes in puree canned
- 1 tablespoon basil minced, fresh
- ½ teaspoon sugar
- ½ teaspoon kosher salt coarse
- ¼ teaspoon black pepper freshly ground
- 1 pound pasta cooked to al dente and drained, favorite type
Instructions
- Heat the olive oil in saucepan and add the onions and garlic. Sauté until they start to soften and are fragrant.
- Roughly chop the whole tomatoes, adding to the pan along with any leftover puree. Also stir in the basil, sugar, salt and pepper.
- Allow to simmer, stirring occasionally, for 10 minutes. Sauce should be a little chunky.
- Toss with your favorite cooked pasta and top with a fresh grates of Fresh Parmesan cheese.
