Easy Pomodoro Sauce

Easy Pomodoro Sauce is a tomato-based pasta sauce made by sautéing onion and garlic in olive oil then simmering canned whole tomatoes with fresh basil and simple seasonings. The resulting sauce is chunky and bright with a balanced savory and slightly sweet flavor that perfectly coats al dente pasta. This sauce provides a straightforward way to enjoy a classic tomato pasta dish using pantry staples and fresh herbs.

Description

The recipe begins by gently cooking chopped white onion and minced garlic in extra-virgin olive oil to develop a mild aromatic base. Canned whole tomatoes in puree, roughly chopped to retain some texture, are added along with their juices to the pan. Fresh minced basil, sugar, kosher salt, and freshly ground black pepper contribute herbaceous notes and seasoning adjustments as the sauce simmers.

Simmering the sauce for about ten minutes allows flavors to meld while keeping the tomato pieces slightly chunky rather than fully pureed, resulting in a rustic texture. Tossing the sauce with your preferred pasta cooked to al dente ensures the noodles hold up well to the sauce's thickness and acidity. Freshly grated Parmesan cheese is recommended to finish, adding a salty, nutty richness that complements the bright tomato flavor.
