Easy Purple Pancakes: Filipino Ube Powder Recipe

These purple pancakes use ube powder to give a vivid color and a subtly sweet flavor characteristic of Filipino desserts. The batter combines ube powder with egg, sugar, baking powder, milk, olive oil, and salt to produce tender, fluffy pancakes with a distinctive hue. Cooking on medium-low heat develops a golden crust while preserving a soft interior. They're served with berries or chocolate sauce, making them a colorful and flavorful breakfast or snack option.

Description

The Easy Purple Pancakes recipe utilizes ube powder, a purple yam powder common in Filipino cuisine, mixed with sugar, baking powder, and a small pinch of salt to create a well-leavened, mildly sweet batter. Wet ingredients include egg, milk, and olive oil, combining to give moisture and richness.

Cooking over medium-low heat, pancakes develop a golden brown exterior while maintaining a tender center. Small bubbles appear on the surface before flipping, signaling readiness. The color is a distinctive purple that visually sets these pancakes apart.

These pancakes can be paired with fresh berries or drizzled with chocolate sauce for added sweetness and texture contrast. They offer a playful twist on traditional pancakes with their unique flavor and bright appearance.

Ingredients

Servings
  • 1 cup +1 tbsp ube powder purple
  • 3 tsp sugar
  • 1 egg
  • 1 tsp baking powder
  • 1 tbsp olive oil
  • 1 pinch salt
  • 1 cup milk

Instructions

  1. In a small bowl mix wet ingredients - the egg, oil, and milk.
  2. Add dry ingredients to the bowl.
  3. Place a nonstick pan onto the stove and set the temperature to medium-low heat.
  4. Mix well to form purple pancake batter.
  5. Place a nonstick pan onto the stove and set the temperature to medium-low heat. Once the pan has heated, pour your desired amount of pancake mixture onto it. You can make a batch of 1-2 pancakes or smaller 4 pancakes at a time.
  6. Flip the pancakes once you begin to see small bubbles forming on top of them after about 3-4 minutes. Cook the pancakes for another 1-2 minutes. Make sure that both sides are golden brown before they leave the pan. Continue to cook the rest of the pancake batter in this manner until the mixing bowl is empty.
  7. When serving, add some berries or fruit, and drizzle with chocolate sauce.
