Easy Purple Pancakes: Filipino Ube Powder Recipe
Description
The Easy Purple Pancakes recipe utilizes ube powder, a purple yam powder common in Filipino cuisine, mixed with sugar, baking powder, and a small pinch of salt to create a well-leavened, mildly sweet batter. Wet ingredients include egg, milk, and olive oil, combining to give moisture and richness.
Cooking over medium-low heat, pancakes develop a golden brown exterior while maintaining a tender center. Small bubbles appear on the surface before flipping, signaling readiness. The color is a distinctive purple that visually sets these pancakes apart.
These pancakes can be paired with fresh berries or drizzled with chocolate sauce for added sweetness and texture contrast. They offer a playful twist on traditional pancakes with their unique flavor and bright appearance.
