Ingredients
- 1 cup quinoa
- 1 1/2 cup water
- 1/4 teaspoon salt
- 1 cup sugar snap peas
- 1 carrot
- 1 red pepper
- 1 cucumber
- 1/2 cup fresh cilantro
- 1/2 cup sunflower seeds
- 2 Tablespoon lemon juice
- 1/8 cup olive oil
- 1/4 teaspoon salt
Instructions
- Add quinoa and salt to 1 1/2 c. of water in a saucepan and bring to a boil, then reduce heat and simmer until all the water is evaporated. Cool.
- Chop the carrot, red pepper, cucumber and cilantro. Toss them, along with the sugar snap peas and sunflower seeds with the quinoa.
- Combine the lemon juice, olive oil and salt. Mix well and pour over salad.
