Easy Red Velvet Pancakes

For the pancakes:

  • 1 ¼ cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon sugar
  • 1 ¼ cups milk
  • 1 egg
  • 3 tablespoons butter melted
  • 3 drops Red food coloring

For the drizzle:

  • ¼ cup powdered sugar
  • 1 teaspoon milk

Instructions

Make the pancake batter:

  1. In a large bowl, sift together the flour, cocoa powder, baking powder, salt, and sugar. Make a well in the middle and pour in the milk, egg, and butter. Mix with a whisk or fork until smooth.
  2. Add the food coloring and stir until the batter reaches the desired shade of red. My food natural food coloring has a lot of pigment so I only need 3 drops. Start there and add more, one drop at a time. 

Cook the pancakes:

  1. Heat a non-stick griddle or large pan over medium-high heat. Once hot, grease, spray, or melt butter on the hot surface. When using an electric griddle, heat it somewhere between 300 and 350F.
  2. Immediately, pour ¼ cup of pancake batter onto the greased pan. Cook the pancakes for about 2 minutes, until the edges begin to look defined and bubbles form. Flip the pancakes over and cook for another minute on the other side. Remove from the pan onto a plate and cook the remaining pancakes.

Make the drizzle:

  1. In a medium bowl, mix the powdered sugar with milk until smooth. Drizzle over the pancakes. 

Serve:

  1. Serve the pancakes warm and drizzle the sugary glaze lightly over the top.
