Description
This recipe begins by heating avocado or a similar vegetable oil in a skillet over medium heat. Chopped purple onions, minced jalapeño, and garlic are sautéed until tender. Half of the black beans, drained and rinsed but with some liquid reserved, are added to the skillet and mashed slightly to create a chunky texture. The remaining beans, lime zest, cumin, chili powder, and ground coriander are stirred in, and the mixture is heated on low for about 15 minutes until warmed through.

Ingredients
- 1 Tbsp avocado oil or sunflower or grapeseed oil
- 1 cup purple onion chopped

Instructions
- Heat oil in a medium non-stick skillet over medium heat; add the onion, jalapeño and garlic. Saute vegetables until tender.
- Add half of the beans to the onion mixture, mashing with a potato masher until slightly chunky; stir in the remaining beans, zest, cumin, chili powder and coriander.
- Heat on low until beans are warmed through, about 15 minutes . Stir in lime juice before serving.
