Easy Salmon Burgers

Salmon Burgers the perfect quick and easy lunch or dinner meal. Use canned salmon, serve with this delicious Greek Yogurt dill sauce.

FOR THE SALMON BURGERS

  • 2 large eggs
  • 14 oz salmon (can) (drained cleaned and flaked), 453 grams
  • 1 cup cracker crumbs** (saltine crackers)
  • 1 talk celery (chopped)
  • ¼ medium onion chopped
  • 2 tablespoons olive oil
  • GREEK YOGURT DILL SAUCE

FOR THE YOGURT DILL SAUCE

  • 2 dashes black pepper
  • tablespoons chopped fresh parsley
  • 2 teaspoons lemon juice
  • ¾ tablespoon dried dill weed
  • ¾ cup Greek yogurt

**I actually used just under a cup (maybe one or two tablespoons less), if it's very wet add more.

Instructions

FOR THE YOGURT DILL SAUCE

  1. In a small bowl using a whisk beat all of the ingredients together until combined. Cover with plastic wrap and refrigerate for at least an hour.

FOR THE SALMON BURGERS

  1. In a large bowl, beat eggs slightly, add salmon, cracker crumbs, chopped celery and onion and combine well. Form 4-6 patties. (I made 4)
  2. In a medium frying pan on medium-high heat, heat oil slightly, add patties and fry until browned on both sides (2-3 minutes each side). Serve immediately with chilled Greek yogurt dill sauce. Enjoy!

**If you want to make burgers, toast your buns first and serve with lettuce and tomato slices.

Notes

  • Yes they can be made in advance, place on a plate cover with plastic wrap or parchment paper and refrigerate up to one day.
  • Store the completely cooled burgers in an airtight container, they will keep for up to 3-4 days in the fridge.
  • You can freeze the salmon burgers uncooked or cooked. To freeze uncooked be sure to freeze them in an airtight freezer safe container on layers of parchment paper. No need to thaw, just cook them frozen. Although they may need some extra cooking time.
  • If you decide to freeze them cooked, then make sure to cool completely before storing in an airtight container again on layers of parchment paper. Let thaw over night in the fridge and warm in the oven.
