  • 6 tablespoons light brown sugar or granulated sugar
  • 1 tablespoon lemon juice
  • 1-½ teaspoons cornstarch
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon freshly grated nutmeg
  • 1 teaspoon pure vanilla extract

For the Cobbler Topping:

  • 1 ½ cups all-purpose flour
  • 6 tablespoons granulated sugar divided
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¾ cup buttermilk
  • 1 teaspoon pure vanilla extract
  • 4 tablespoons butter , melted and cooled
  • 1 teaspoon ground cinnamon

Remove the skillet from the heat; set aside. In a small bowl, whisk to combine lemon juice, vanilla, and cornstarch, then stir in the peach filling. Cover the skillet and set aside off heat.
