Sweet, juicy peaches get topped with a buttery crumble and baked to perfection in this cast iron peach cobbler recipe that will definitely be a family favorite!

Ingredients
- 8 peaches pitted and sliced
- ¾ cup granulated sugar divided, plus 1-2 teaspoons for topping
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1 cup all-purpose flour
- 1 tablespoon lemon juice
- 1 tablespoon pure vanilla extract
- ½ teaspoon sea salt
- ½ cup unsalted butter cold (1 stick)
- 1 large egg
Instructions
- Lightly spray a 10” cast iron skillet and preheat oven to 375F.
- Core and slice peaches into thin wedges, and set aside in a medium bowl.
- In a small bowl, whisk together ½ cup sugar, cornstarch, cinnamon.
- Pour sugar mixture over the peaches and mix well (I like to do this in 2 steps for a more even mix).
- Meanwhile, in another medium bowl, whisk all-purpose flour, remaining ¼ cup sugar (reserving the 1-2 teaspoons for topping), and sea salt.
- Add in chunks of cold butter and work it into the flour mixture by hand (note: if you have a dough blender/cutter you can use this, or two forks).
- Add the egg into the dough and mix until well combined.
- Pour peach mixture evenly into prepared skillet.
- Sprinkle crumbles of dough on top of the peaches and cover even with remaining sugar.
- Bake for 45 minutes or until golden brown on top and allow it to cool and thicken (about 15-20 minutes).
- Enjoy warm with vanilla ice cream of on its own!
Notes
- Choose coarse: If you can, use coarse sugar to sprinkle over the peach cobbler. This lends it a beautiful texture.
- Use cold butter: Make sure the butter you’re using to prepare the flour mixture is cold. This will give it a better texture.
- Let it sit: I would recommend letting the cobbler sit for 20-30 minutes on the countertop and cool down a little bit, soaking up all the delicious juices before you serve it.
