Sticky garlic chicken is an easy and super tasty dinner recipe served with steamed rice and greens of your choice.

Ingredients
- 500 g (1lb) boneless, skinless chicken thighs sliced into bite-size chunks
- 1 tsp salt
- 1 tbsp sesame oil
For the sauce
- 2 tsp sesame oil
- 1 tsp ginger crushed
- 6 garlic cloves crushed/minced
- 1 tbsp hoisin sauce
- ¼ cup soy sauce
- 2 tbsp rice vinegar
- 1 tbsp mirin
- ¼ cup water
- 2 tbsp sugar
- 2 tsp cornstarch

Instructions
- Cube the chicken into bite-sized pieces then transfer to a mixing bowl.
- Add sesame oil and season with salt. Mix well.
- Heat a large pan or skillet over medium-high heat. Cook the chicken until golden brown on all sides then remove from the pan and set aside.
- To make the sauce, mix the soy sauce, Hoisin sauce, rice vinegar, mirin, sugar, water and cornstarch together.
- In the same pan you cooked the chicken in, add the rest of the sesame oil, the ginger and the garlic.
- Saute for a few seconds then pour in the sauce.
- Cook until the sauce has thickened then add the chicken and any of its resting juices back into the pan.
- Cook for a few minutes until glossy and the chicken is cooked through.
- Serve the chicken and sauce over rice (or noodles) with greens of your choice.
- Scatter with sliced chillies and cilantro/coriander (or sliced spring onions) and serve.
