Easy Tripe Soup Recipe

When you think about tripe, does it make you feel unsure? That’s probably because you haven’t had it or the tripe you’ve tasted wasn’t well prepared. Tripe is actually very delicious when it’s properly cooked.

Ingredients

  • 1 pound honeycomb tripe rinsed and sliced into thin strips
  • 1 tablespoon olive oil
  • 1/2 red onion chopped
  • 3 celery thinly sliced, stalks
  • 3 cloves garlic minced
  • 1/3 cup wine
  • 3/4 cup tomato sauce
  • 2 red peppers dried
  • 1/2 cup parmesan grated
  • herbs optional

Instructions

  1. Place the tripe into a deep pan and cover with water. Bring to a simmer and add some coarse salt.
  2. Let it continue to simmer, covered, for 1-2 hours until tender.
  3. Sauté the onion, garlic and dried red peppers in olive oil, just to add a bit of color to the oil. Add the celery and cook for about 5 minutes. Remove from the heat and set aside.
  4. When the tripe is tender, add it to the pan with the other ingredients and stir over medium-high heat. Add the wine and reduce.
  5. Add the tomato sauce, return to a simmer, and cover for about 30 minutes. Taste and add salt if needed.
  6. Combine the grated parmesan cheese in a bowl with the optional herbs.
  7. Serve the tripe topped with the cheese mixture.
