Easy Wheat Apple Cobbler (Eggless!!)

Made insanely delicious, this Whole Wheat Apple Cobbler is rich in flavors of fresh juicy apples, coffee, and walnuts! This Apple Cobbler without eggs is made with easily available ingredients and with a mild twist to the classic cobbler recipe by using whole wheat flour!

Ingredients

  • ¾ cup wheat flour
  • 1 teaspoon cinnamon and cardamom powder
  • 1 medium apple
  • 1 tablespoon cornflour
  • 1 teaspoon Desi ghee/ olive oil
  • 2 tablespoon sugar
  • 1 tablespoon coffee powder I have used Nescafe
  • ¼ cup walnuts chopped in small chunks
  • ½ cup fresh milk cream
  • 1.5 tablespoon butter can use ghee as well
  • 1 teaspoon lemon juice
  • a pinch baking soda

Instructions

  1. Gather all the ingredients.
  2. Cut Apple in any desired shape.
  3. Take a bowl and add coffee powder to it. Mix sugar in it.
  4. Add corn flour, Lemon Juice to it and some water to make a smooth mix.
  5. Mix well as sugar would leave water. Add cinnamon and cardamom powder.
  6. Add chopped Apples and cover it while we make batter.
  7. Take another bowl and add butter to it. Room temperature works best.
  8. Add coffee powder, cinnamon and cardamom powder to the butter.
  9. Add Sugar and give it a good mix. Initially butter would crumble up like bread. Slowly, it would be melt and looks a smooth mixture.
  10. It takes around 3-5 min of mixing. One may use electric blender as well.
  11. Add wheat flour, Desi Ghee and baking soda to it.
  12. Add milk and make a smooth batter.
  13. Take a round / or any shape baking dish. Grease it with ghee/oil.
  14. Add first the layer of apple mix. Top it with walnuts.
  15. Add over the apple layer the wheat batter. Add walnuts.
  16. Now its all ready to be baked. I had baked it in my old OTG @ 180 degrees (OTG was preheated for 10 min @ 100 degrees} for around 10 min or till knife comes out clean.
  17. The aroma of blending flavours was amazing. The Apple cobbler with coffee is ready to serve. Let it cool for 5 min and then slice it. Top it with honey, caramel or maple syrup! Enjoy!!

Notes

  • Let the apple coffee sugar mix rest for 10 minutes to blend in the flavors.
  • Make sure to grease the baking pan before transferring the apples and batter.
  • After adding the baking soda, don’t overmix the batter.
  • If the mixture is runny, add the dry wheat powder to balance it. Though mine was a bit runny, the end result was good.
  • You may spread the batter unevenly in a few lumps, which is fine.
  • The milk and butter shall be at room temperature.
