Egg Vegetable Casserole
Description
The recipe starts with whisking 18 eggs together with a splash of milk and seasoning with salt, black pepper, and a seasoning blend such as Spike or Italian seasoning. Separately, diced red and yellow bell peppers along with red onion are sautéed in olive oil until softened, then fresh chopped spinach is briefly cooked in the same pan. These vegetables are combined with diced Roma tomatoes and folded into the egg mixture along with shredded mozzarella cheese.
This mixture is poured into a greased 9 by 13-inch baking dish and baked at 350°F until the eggs are fully cooked and the top has turned golden, typically 35 to 40 minutes. A sprinkling of Parmesan cheese can be added before or after baking for extra savory depth and a slightly nutty finish.
The casserole is substantial and colorful, making it suitable for feeding a crowd at breakfast or brunch. The vegetables impart moisture and texture, balancing the richness of the eggs and cheese, resulting in a dish that is both filling and flavorful.
Ingredients
- 18 egg
- milk splash, skim
- salt to taste
- black pepper to taste
- Spike seasoning
- olive oil
- 1/2 red pepper diced
- 1/2 yellow bell pepper diced
- 1/2 red onion diced
- 1 cup spinach chopped, fresh
- 3 Roma tomato diced
- 1 cup mozzarella cheese shredded
- Parmesan Cheese shredded
Instructions
- In a large bowl, whisk together the 18 eggs. Add a splash of milk. Add salt and pepper to taste. We also used Spike seasoning, 1-2 teaspoons. If you don't have this, try Italian seasoning instead.
- In a large skillet, saute the peppers and onion in a little bit of olive oil. Add in the spinach for a minute or two. Pour the eggs in a greased 9 by 13 Pyrex dish. Add in the sauteed veggies and tomatoes. Stir everything in the pan. Stir in mozzarella cheese. Make sure everything is distributed evenly.
- Bake in a 350 degree oven for about 35-40 minutes or until the eggs are set and golden.
- Sprinkle the casserole with Parmesan cheese if you wish.
