Elote Seasoning Recipe

This Elote Seasoning captures the life and flavor of one of Mexico's most famous street foods, elotes, in the form of a convenient spice blend you can add to a variety of foods for a delicious flavor kick!

Ingredients

  • 1 tablespoon chili powder
  • 1 tablespoon guajillo or ancho chili powder (can substitute regular chili powder)
  • 1 tablespoon sweet paprika
  • 2 teaspoons chipotle powder (can substitute smoked paprika)
  • 1 tablespoon grated Parmesan cheese , dried not fresh (comes in canisters at room temp) **see note
  • 2 teaspoons dried cilantro
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon dried lime zest (see below for instructions)
  • 1 teaspoon sugar
  • 1/2 teaspoon Kosher or sea salt
  • 1/2 teaspoon cayenne pepper

Instructions

  1. To make the lime zest (this can be done days in advance): Preheat the oven to 170-180F/75-80C.Zest one lime, lay the zest out on a plate and stick it in the oven for 15-20 minutes. Remove and let it cool completely, then crumble it up finely with your fingers.
  2. Place all of the ingredients in a bowl or in a jar and stir or shake to thoroughly combine. Store in a glass jar with an airtight lid in the fridge where it will keep for up to a month. At room temperature it should be used within a week. Makes about 1/3 cup seasoning.

Notes

  • Storage:  Unless you're using the spice blend right away, be sure to use dehydrated and not fresh parmesan (dehydrated is the stuff in the canisters stored at room temp). If storing at room temp I recommend using the elote seasoning within a week. If you store it in the fridge, it will keep for up to a month.
