Description

This sauce begins by gently cooking onions in olive oil and butter until translucent and lightly browned, then adding smashed garlic to infuse aroma without burning. Tomato paste is stirred in and cooked briefly before crushed peeled San Marzano tomatoes and their juices are added. The sauce is seasoned with red pepper flakes, oregano, bay leaves, sugar, salt, and black pepper, then simmered from 15 minutes up to 2 hours to deepen flavors and meld ingredients.

The simmering produces a savory, slightly sweet tomato base with herbal notes from oregano and bay leaves, complemented by spicy hints from red pepper flakes. The texture can be left chunky or blended smooth according to preference.

This versatile sauce pairs well with pasta, meats, or as a base for other dishes. It stores well and can be refrigerated or frozen for later use.

  • 1 tbsp olive oil
  • 1 tbsp butter unsalted
  • yellow onion medium diced, half medium
  • 5-6 garlic smashed, cloves
  • 3 tbsp tomato paste
  • 1/2 tsp red pepper flakes
  • 2 San Marzano Tomatoes 28 oz cans, peeled and crushed with reserved juice
  • 1 tsp oregano
  • 2 bay leaf
  • 1 tbsp granulated sugar white
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large pot or dutch oven, melt butter in olive oil over medium heat.
  2. Toss in onions and saute until they are translucent and gaining a golden brown color, about 5 minutes. Add in garlic and cook for one minute, stirring to make sure the garlic doesn't burn.
  3. Add tomato paste, stir well and cook for a minute or two, making sure it doesn't burn, then pour in tomatoes and stir well.
  4. Stir in sugar, oregano, and bay leaves, then cover the pot, lower the temperature to medium-low, and simmer for 15 minutes to 2 hours. The longer you simmer, the more time the flavors have to meld together.
  5. Remove bay leaves and take pot off the heat. Season to taste with sugar, salt and pepper.
  6. Optional: blend the sauce well in a blender if you want a smooth sauce.
