Ingredients
- 3 boneless skinless chicken breasts
- 1 medium onion thinly sliced
- 3 bell peppers red, yellow and green
- 2 Tablespoons olive oil divided
- 1 lime
Fajita Seasoning:
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cayenne pepper
For Serving:
- tortillas
- sour cream
- Pico de Gallo
- guacamole
Instructions
- Mix together the fajita seasoning ingredients in a small mixing bowl.
- Place the sliced chicken into a large bowl. Sprinkle the fajita seasoning mixture on top and toss to coat the chicken in the mixture.
- Preheat 1 tablespoon of olive oil over medium high heat in a large skillet.
- Add the chicken to the pan (you may have to work in batches depending on the size of your pan) and cook for 3-5 minutes until the chicken is cooked through.
- Remove the chicken from the pan to a separate plate.
- Add the remaining olive oil to the pan. Stir in the onions and sliced peppers and sauté for 4-5 minutes, stirring them frequently.
- Add the sliced chicken back to the pan and stir to combine with the onions and peppers.
- Squeeze the lime juice on top and then the fajitas are ready to serve and enjoy!
Notes
- Refrigerate any leftovers in an airtight container for up to 5 days.
