Description
Begin by cooking spaghetti to al dente, rinsing it under cold water to stop further cooking and prevent sticking. Vegetables including diced cucumber, halved grape tomatoes, diced bell peppers, sliced olives, diced red onion, and chopped fresh parsley are combined with the cooled pasta. Crumbled feta cheese adds a creamy salty note. The dressing can be a store-bought Greek salad dressing or a homemade vinaigrette made from red wine vinegar, dried oregano, honey, garlic powder, and olive oil slowly whisked in. Tossing and refrigerating the salad for at least two hours allows the pasta to absorb the dressing and flavors to meld. This salad is suitable as a side dish or a light, refreshing main, especially in warmer weather.
Ingredients
- 1 pound spaghetti
- ¾ English cucumber diced
- 1 pint grape tomatoes halved
- 1 cup bell pepper any color, diced
- ¼ cup olives black olives or kalamata olives, sliced, pitted
- ⅓ cup feta cheese more to taste, crumbled
- ¼ cup red onion diced
- 1 tablespoon parsley chopped, fresh
Dressing
- 1 cup Greek salad dressing

- ⅓ cup olive oil
Instructions
- If making homemade dressing, combine all ingredients except oil in a bowl. Slowly drizzle oil while whisking. Set aside.
- Cook spaghetti in a large pot of salted water until al dente according to package directions. Drain and rinse under cold water.
- Combine all ingredients in a large bowl. Add dressing and toss.
- Refrigerate at least 2 hours before serving.
Notes
- Rinsing the cooked spaghetti under cold water stops cooking and helps prevent clumping.
- Any bottled vinaigrette or a homemade Greek-inspired dressing can be used depending on preference.
