Fettuccine Alfredo Pasta (No Cream)

Make classic Italian fettuccine alfredo that’s creamy, cheesy, and delicious with only 3 ingredients and no cream for this 5-step recipe.

Ingredients
- 1 lb Fettuccine pasta (See Note 1)
- 1 cup butter (2 sticks, 8 ounces total)
- 10 oz Parmesan Cheese finely grated
Instructions
- In a large pot bring 4 quarts of water to a boil over high heat.
- In another deep skillet melt the butter over medium-low heat.
- Add at least 2 teaspoons of kosher salt to the water. Stir to dissolve and add the dry fettuccine pasta. Cook 13 minutes, or 2 minutes if using fresh pasta.
- Using tongs, transfer the pasta to the skillet with melted butter, tossing to coat all over in the butter.
- Turn off the heat and add the finely grated cheese, tossing the pasta gently until the cheese is melted and sauce is thick and creamy. Pour in the pasta water, a little at a time, tossing and emulsifying the sauce until silky smooth.
- Serve immediately.
Notes
- This recipe works using either 1 pound of dry fettuccine pasta that you cook for 13 minutes, or fresh fettuccine pasta that you will cook for 2-3 minutes.
