Chicken and Spinach Pie

Chicken and Spinach Pie combines cooked chicken breast, thawed spinach, and Swiss cheese inside a double pie crust. The filling is bound together with an egg and milk mixture, then baked until the crust is golden and the filling is set. This hearty pie offers a savory blend of textures, from tender chunks of chicken to the creamy spinach and melted cheese, making it suitable for a filling lunch or dinner.

Description

The Chicken and Spinach Pie features cooked chicken breast pieces and spinach mixed with shredded Swiss cheese layered inside a baked pie crust. An egg and milk mixture poured over the filling helps to set the ingredients during the baking process. The top pie crust is vented to allow steam to escape, preventing sogginess and ensuring a crispy golden crust. Baking takes about 50 minutes until a clean knife comes out from the center, indicating the filling is cooked through. The pie balances protein from the chicken with leafy greens and a mild cheese, yielding a tender and flavorful filling.

Serve this pie warm as a satisfying main dish alongside a simple salad or steamed vegetables. It can also work well for potlucks or meal prepping for several servings.
