Fish and Chips

Fish and Chips features crispy battered cod or halibut filets fried to a golden brown alongside thick-cut russet potato fries. The fish is dipped in a seasoned batter made with flour, beef broth, eggs, and baking powder, then coated in Wondra flour before frying. The chips are fried separately until crisp and golden. This classic dish is served with lemon, malt vinegar, and tartar sauce to complement the rich textures of the fried fish and potatoes.

Description

This Fish and Chips recipe uses cod or halibut filets coated in a batter combining flour, beef broth, eggs, baking powder, salt, and pepper, which produces a savory and light crust when fried. The extra coating of Wondra flour adds crispness to the fish exterior once fried at 375°F until golden and flaky inside. The accompanying chips are freshly cut russet potatoes, deep-fried at the same temperature until golden and crisp, then kept warm in the oven. The combination of flaky fried fish and well-seasoned, crispy chips makes for a hearty and satisfying meal.

The fish is served with traditional condiments such as lemon wedges, malt vinegar, and a homemade tartar sauce, which add bright acidity and creaminess to balance the fried components. The method advises cooking the fries before the fish to prevent the oil from tasting fishy and suggests seasoning the fries with kosher salt while still warm. Excess oil on the fish can be removed by draining on paper towels after frying.

This dish is ideal for a filling lunch or dinner and pairs well with classic British accompaniments. The preparation details help ensure a crisp crust on the fish and fries while keeping the interior tender and flaky.
