Ingredients
Dressing
- ¼ C extra virgin olive oil
- 1 Tbsp lemon juice fresh
- 1 Tbsp red wine vinegar
- 1 garlic peeled, pressed and minced, clove
- 1 ½ tsp oregano dried
- ½ tsp kosher salt
- ¼ tsp peppercorn cracked
For the Power Bowl
- ½ C quinoa cooked
- ½ C chickpeas drained and rinsed, canned
- ½ C grape tomato halved, or cherry tomato
- ⅓ C sprouts
- 1 egg sliced, hard-boiled
- ⅓ C hummus
- 1 Tbsp sunflower seeds
- 2 Tbsp dressing
Instructions
- Add dressing ingredients to a small container with a lid. Shake vigorously to combine, then set aside.
- In the bottom of a single-serving bowl, add the quinoa, followed by the chickpeas, tomatoes, sprouts, and hard-boiled egg. Spoon the hummus into the center, then sprinkle with sunflower seeds. Shake dressing, then drizzle over bowl. Serve immediately.
