Ingredients

Servings

Dressing

  • ¼ C extra virgin olive oil
  • 1 Tbsp lemon juice fresh
  • 1 Tbsp red wine vinegar
  • 1 garlic peeled, pressed and minced, clove
  • 1 ½ tsp oregano dried
  • ½ tsp kosher salt
  • ¼ tsp peppercorn cracked

For the Power Bowl

  • ½ C quinoa cooked
  • ½ C chickpeas drained and rinsed, canned
  • ½ C grape tomato halved, or cherry tomato
  • C sprouts
  • 1 egg sliced, hard-boiled
  • C hummus
  • 1 Tbsp sunflower seeds
  • 2 Tbsp dressing

Instructions

  1. Add dressing ingredients to a small container with a lid. Shake vigorously to combine, then set aside.
  2. In the bottom of a single-serving bowl, add the quinoa, followed by the chickpeas, tomatoes, sprouts, and hard-boiled egg. Spoon the hummus into the center, then sprinkle with sunflower seeds. Shake dressing, then drizzle over bowl. Serve immediately.
