Fluffy Blueberry Oatmeal Pancakes

  • 1 cup milk any
  • 2 eggs
  • 3 tablespoons butter melted
  • 2 cups old-fashioned oats
  • 1 tablespoon baking powder
  • ¼ teaspoon salt
  • 1 tablespoon sugar
  • 1 cup blueberries fresh or frozen

Instructions

Make the pancake batter:

  1. Place all the ingredients in the blender in the order listed, except the blueberries, making sure the milk is first to ensure a smooth batter.
  2. Pour the batter in a large bowl, using a spatula to scrape the sides of the blender to get it all in.
  3. With the spatula, gently fold the blueberries into the batter, until they're evenly distributed and lightly covered with the batter.

Cook the pancakes:

  1. Heat a large non-stick pan (or griddle) over medium-high heat. Once hot, grease the surface with oil, spray, or butter. Immediately, pour ¼ cup of pancake batter onto the greased pan, making sure each pancake has several blueberries.
  2. Cook the pancakes for about 2 minutes, until the edges begin to look defined and bubbles form. Flip the blueberry oatmeal pancakes over and cook for another minute on the other side. Make sure not to press them down with the spatula. Repeat with the rest of the pancake batter.

Serve:

  1. Build a stack of warm blueberry oatmeal pancakes on a plate and top them with your favorite toppings and blueberry syrup if desired.
