Description
Making Fluffy Oladi starts with warming kefir and water, then combining with egg, sugar, and salt. Flour and baking soda are folded in gently to form a thick batter resembling dense sour cream. Diced peeled apples are mixed in to add sweetness and texture.
The batter is cooked in batches in hot oil over medium heat until golden brown, creating a slightly crispy exterior while keeping the interior moist and fluffy. The apples soften during frying, providing bursts of flavor in each bite.
Oladi are traditionally served with jam, honey, or sour cream, allowing for customizable sweetness or tang. These pancakes can be prepared ahead and stored refrigerated for a few days, reheating comfortably in a microwave. Vegan adaptations use mashed banana or applesauce instead of egg, and kefir can be substituted with a yogurt and milk mixture or buttermilk for similar results.
Ingredients
- 1 c Kefir
- ¼ c water
- 1 egg
- 2 c all-purpose flour you might need to add 2-3 more tablespoons of flour
- 2 tablespoon sugar
- ½ teaspoon salt
- ½ teaspoon baking soda
- 3 apple peeled, cored, and diced
- 5-6 tablespoon neutral oil coconut oil or avocado oil, for cooking
Instructions
Make a batter for Oladi
- In a small bowl combine Kefir and water and microwave for 30 seconds. In another large mixing bowl combine together egg, salt and sugar. Add warmed kefir and mix everything until combined.
Add flour
- Gradually add in 2 cups of flour mixing the batter until it's smooth and without lumps. The batter should resemble a dense sour cream. If it's too thin, add a few more tablespoons of flour.
- Add in baking soda and mix everything once again.
- Add diced apples and carefully give everything a stir.
Fry the pancakes
- Melt 2 tablespoon of oil in a non-stick skillet over medium heat. Drop about a heaping tablespoon of batter in a skillet and fry for 2-3 minutes or until golden-brown. Flip and fry for another minute. You can cook 5-6 Oladi at a time.
- Transfer fried pancakes on a plate, add more oil if needed and continue frying the remaining batter.
- Serve with your favorite jam, honey or sour cream.
Notes
- Oladi can be stored in the refrigerator for 2-3 days and reheated in the microwave until warm.
- For a vegan version, replace the egg with half a mashed banana or half a cup of applesauce.
- Kefir can be substituted using a mix of three-quarters cup whole fat Greek yogurt and one-quarter cup milk, or with an equal amount of buttermilk.
