Focaccia Three-Cheese Italian Grilled Cheese

Warm toasted focaccia filled with three different types of cheeses, a garlic tomato paste, roasted capsicums/peppers, juicy tomatoes and basil leaves.

Ingredients

  • 4 lices focaccia bread or herb, or garlic
  • 4 tablespoons ricotta cheese divided, light
  • 4 tablespoons tomato paste or normal tomato paste mixed with ½ teaspoon minced garlic, garlic
  • 6 lices red capsicum drained and divided, bottled, char grilled or roasted, sliced
  • 1 medium tomato sliced and divided, ripe
  • ½ cup mozzarella cheese divided, sliced or grated
  • 4 tablespoons Parmesan Cheese divided, grated
  • 10 leaves basil divided, fresh

Instructions

  1. Preheat sandwich press, or prepare a frying pan with a small amount of cooking oil spray. Set aside.
  2. Spread the ricotta cheese over the focaccia bases. Layer with the peppers/capsicum pieces; tomato slices; mozzarella slices; parmesan cheese and basil leaves. Season with salt (if you wish).
  3. Spread the tomato paste over the focaccia tops, and sandwich them over the cheese. Grill in the preheated sandwich press or on the frying pan, (for about 5 minutes for sandwich press; or 4 minutes each side for frying pans), until toasted, heated through and cheese has melted.

Notes

  • For extra gooey melted cheese, use thick slices of mozzarella, the thicker the slice, the gooier the cheese melt!
