Description
This recipe assembles breakfast burritos by filling tortillas with scrambled eggs mixed with mini peppers, cooked crispy bacon, cooked sausages, and shredded cheese. The combination offers a mix of soft eggs, crunchy bacon, savory sausage, and melty cheese wrapped in a soft tortilla.
The burritos are individually wrapped tightly with saran wrap or parchment paper and frozen in a single layer on a baking sheet to avoid sticking and ensure even freezing. Once frozen, they can be stored together in a ziplock bag for easy access.
For reheating, the burritos can be microwaved for 1 to 2 minutes or heated in a toaster oven at 350°F for 10 to 12 minutes until warmed through. This flexibility makes them suitable for quick breakfasts or snacks that are satisfying with protein and vegetables.
Ingredients
- 12 egg scrambled
- 2-3 mini pepper
- 6 Bacon cooked crispy
- 6 sausages
- 6 tbsp cheese shredded
- 6 tortilla wraps
Instructions
- Prep your scrambled eggs with peppers, bacon (I usually oven bake mine), and sausages.
- Divide up the ingredients into 1/6 to go on each of the 6 tortilla wraps. Wrap tightly.
- Wrap the burrito with saran wrap or parchment paper if you plan on freezing them. Freeze the burritos in a single layer on a baking sheet — they'll freeze faster and more uniformly this way so you can place them together in a ziplock bag afterwards.
- From frozen: Unwrap and microwave for 1 to 2 minutes, until warmed through, or heat in a toaster oven at 350°F for 10 - 12 minutes.
