French Onion Chicken

This incredibly flavorful French Onion Chicken starts with perfectly seared, tender chicken breasts smothered in a savory pan sauce with sweet caramelized onions and topped with gooey melted cheese.

Ingredients

  • 1 ½ pounds chicken breasts cut into 6 pieces
  • 2 yellow onions sliced
  • 5 ounces gruyere cheese shredded
  • 1 cup chicken broth
  • cup white wine I use Pinot Grigio
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 tablespoon fresh parsley
  • 1 teaspoon dried thyme
  • 1 teaspoon salt divided
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon xanthan gum

Instructions

  1. Heat a large oven-safe skillet to medium and add half the olive oil and butter. Once the butter has melted, add in the chicken, thyme, half the salt and pepper.
  2. Sauté for a few minutes on each side or until almost cooked through. Remove and set aside on a plate, covered.
  3. Add in the remaining olive oil, butter, onions and the remaining salt. Sauté until the onions have caramelized and have some good color. This should take about 10 minutes or so.
  4. Preheat oven to 400°F.
  5. Pour in the white wine to deglaze the pan, scraping up any brown bits of flavor. Simmer for 30 seconds, then stir in the chicken broth and parsley. Whisk in the xanthan gum and simmer for 2-3 minutes or until reduced slightly.
  6. Add the chicken back in, spoon some of the onions over each piece of chicken and top with the Gruyere cheese.
  7. Bake for 8-10 minutes or until the cheese is melted and golden, then serve.

Notes

  • If you can't find Gruyere cheese, you can use Swiss, provolone or mozzarella instead. But honestly, the Gruyere has the best flavor for this recipe.
  • If you don't want to use wine, you can use more chicken broth instead.
