Fresh Basil Walnut Pesto
Description
This pesto recipe combines packed fresh basil leaves with toasted walnuts, garlic cloves (which may be toasted for a milder flavor), rock salt, crushed black pepper, freshly squeezed lime juice, and extra virgin olive oil. Ingredients are processed together until roughly blended to retain some texture. The lime juice adds a bright acidity that sets this pesto apart from traditional versions using lemon.
The sauce can be stored in an airtight container in the refrigerator, where it keeps for several weeks. It lends itself to use in pasta dishes, as a spread, or a flavorful addition to various cooked dishes. Toasting the walnuts and garlic rounds their flavor and adds depth.
Ingredients
- 2 cup basil tightly packed, fresh leaves
- ¾ cup walnuts toasted
- 10 cloves garlic toasted, optional
- 1 teaspoon rock salt
- 1 tablespoon crushed black pepper
- lime juice of 1
- ½ to ¾ cup extra virgin olive oil
Instructions
- Place all ingredients in a food processor or blender and blend into coarse sauce.
- Store in air tight container and refrigerate it.
- It will last for few weeks.
