Description
Fried Bread breakfast starts by heating bacon fat in a pan, ideally from nitrate-free, naturally cured bacon or freshly rendered fat from frying bacon. Bread slices and eggs are fried side by side in the hot fat, allowing the bread to absorb flavor as it browns to a golden crispness. The eggs can be cooked to any desired doneness, including frying, soft-boiling, or poaching, offering flexibility.
Seasoned with salt and black pepper, this dish combines savory elements with a robust mouthfeel from the fried bread crust and richness of bacon fat. The bacon fat also adds aroma and complexity. This breakfast favors hearty appetites and makes use of leftover bacon fat efficiently.

Ingredients
- 1 tbsp bacon fat I use naturally cured, nitrate/nitrite free - or fry 2 rashers of bacon and use the fat, leftover
- 1 lice bread preferably homemade
- 1 egg cage free, organic
- salt to taste
- black pepper to taste
Instructions
- Put the bacon fat in pan (preferably cast iron).
- Fry the bread and egg in the bacon fat, side by side. The bread should turn a lovely golden brown color. Cook the egg as desired (or you can soft-boil it, poach it, etc.)
- Place the fried bread on a plate and top with the egg, and a side of bacon.
- Serve immediately with a steaming, hot mug of tea.
